Tokyo's Local FoodShima-zushi

As its name says, shima-zushi is a sushi made with fish caught near the islands, such as shimaaji <Japanese mackerel>, kanpachi <amberjack>, and tobiuo <fliying fish>. Since the weather in these islands is warmer, fish meat is marinated in shoyu-based sauce (method called zuke) and sushi rice is flavored a bit sweeter and stronger. Since it used to be difficult to find wasabi <Japanese horseradish> on the islands, shima-zushi is generally served with karashi <mustard> paste or hot pepper. Shima-zushi is best known as a local dish of Hachijojima
